Technically Speaking

Meat packers and processors are utilizing-and experimenting with-existing and emerging technologies more than ever.

Industry's intensifying drive to produce better, safer products has placed technology utilization squarely in the spotlight. "Technologies for World Markets" is the theme of the Institute of Food Technologists' 1995 Annual Meeting & Food Expo, which takes place June 3 to 7 in Anaheim, Calif.

Attendees will have an opportunity to learn the latest in science during a four-day technical program, as well as review exhibits at more than 2,000 booths during the trade show, which will be held at the Anaheim Convention Center.

A two-day Basic Symposium-and five continuing education programs-will take place at the Anaheim Marriott Hotel prior to the convention/expo.

The IFT convention's opening session begins at 7 p.m. on June 3 at the Anaheim Hilton Hotel. Clayton K. Yeutter, former U.S. trade representative and USDA secretary, is the keynote speaker. He will discuss the global impact of the General Agreement on Tariffs and Trade and the North American Free Trade Agreement.

Technical program and expo

Starting at 9 a.m. on June 4, and ending at noon on June 7, the technical program will feature more than 1,000 scientific papers and 42 symposia.

A variety of topics, including international harmonization of food safety regulations, potential health benefits of international foods and beverages, and new directions in nutrition research, will be covered.

Three Hot Topic sessions will be featured. A discussion of health claims, a panel of food company presidents addressing current issues, and a look at world class companies' approaches to world markets are the focal points of these sessions.

The exhibits will offer attendees an opportunity to identify trends in food science and technology while reviewing more than 2,100 booths from nearly 800 exhibitors.

Basic Symposium

Food lipids and health will be the focus of a two-day Basic Symposium sponsored by IFT in cooperation with the International Union of Food Science & Technology (IUFoST) at the Anaheim Marriott Hotel. Sessions one and two take place June 2, and sessions three and four take place June 3.

Richard McDonald, chief of FDA's Food Processing Branch at the National Center for Food Safety and Technology and the program moderator, puts a perspective on the program.

"Knowledge about the relationship of lipids to human health is rapidly expanding. In this symposium, presentations by leading researchers in industry, academia and government will underscore the dramatic effect that this knowledge will have on the future of food research and development," McDonald says.

Session one (Lipid Health Issues) will explore dietary recommendations on lipids and the relationship between food lipids and cholesterol, cancer, the immune system, and bone health.

Session two (Health, Functionality and Analysis of Food Lipids) will cover improvements in the functionality of lipids in foods, the formation of lipid oxidation during deep-fat frying, food labeling issues surrounding trans-fatty acids, and the analysis and health effects of cholesterol oxidation products.

Session three (Lipid Oxidation and Flavor) will address the chemistry of lipid oxidation, the importance of lipid oxidation to the food processing industry, contributions of lipids to food flavors, the development of natural antioxidants and food lipids, and the measurement of lipid oxidation to evaluate the quality and stability of fats and oils in food.

Session four (New Developments Concerning Lipids in Food Products) will highlight applications of biotechnology in developing edible oils; current developments in fat replacers, the function of lipids in medical and designer foods, and the physiological, cognitive and sensory influences of fat consumption.

Continuing education

IFT will offer five continuing education programs on June 2 and 3 at the Anaheim Marriott Hotel.

The programs are: Practical Approaches to Food Safety and Nutrition Labeling for Foodservice, Fundamentals of Aseptic Processing and Packaging, Optimizing Food and Beverage Flavors, Introduction of ISO 9000 for the Food Processing Industries, and Rapid Methods for Quality Monitoring in the Food Industry.
